Pecan Crusted Salmon

Ingredients
1 pound
Salmon fillet or fillets (skin on if possible)
3/4 teaspoon
Salt
Pepper to preference
1 1/2 tablespoons
Dijon mustard
1 1/2 tablespoons
Honey
OR maple syrup
1/4 cup
Pecans (finely chopped)
2 tablespoons
Italian panko breadcrumbs
2 tablespoons
Grated Parmesan cheese
Step by Step Instructions
- Preheat the oven to 425 degrees. Bring the salmon to room temperature and pat it dry, then season it with the salt & pepper. Mix the mustard & honey/maple syrup together in a bowl, then brush it on to the salmon.
- In a separate bowl, mix the pecans, breadcrumbs, and Parmesan cheese together, then sprinkle the mixture on top of the salmon.
- Bake the salmon for 15 to 20 minutes, then serve.
