Dark Chocolate Goat Cheese Brownies with Honey

FOR THE PAN:
Unsalted butter
1 teaspoon
Dark Cocoa Powder
FOR THE BROWNIE BATTER:
2/3 cup
All-purpose flour
1/4 teaspoon
Baking powder
1/4 teaspoon
Espresso Powder
1/8 teaspoon
Salt
1/2 cup
Unsalted butter
6 ounces
Dark chocolate chips (or chopped bar chocolate)
3/4 cup
Granulated Sugar
1 large
Egg
1/2 teaspoon
Vanilla extract
FOR THE GOAT CHEESE & HONEY LAYER:
4 ounces
Goat cheese (softened)
2 tablespoons
Unsalted butter (softened)
2 tablespoons
Granulated Sugar
1 large
Egg
1/4 cup
Honey
1/4 cup
All-purpose flour
Step by Step Instructions
- Preheat oven to 350 degrees and grease a 8x8x2 inch square pan with butter. Add the cocoa powder to the pan and spread it around evenly across the bottom and sides of the pan.
- Combine flour, baking powder, espresso powder, and salt from the brownie section in a small bowl and stir until well combined and set aside.
- Melt the butter & chocolate chips in the brownie section in a saucepan over medium low heat, stirring to combine. Add the sugar and stir it in well, then stir in the egg and vanilla extract.
- Mix the chocolate mixture and the brownie section's dry ingredient mixture together, then add the batter to the prepared pan.
- Soften the goat cheese and the 2 tablespoons of unsalted butter in the microwave for 10 to 15 seconds. Whip the goat cheese, butter, and granulated sugar together with an electric mixer for 2 to 3 minutes on medium speed.
- Add the egg to the mixture and stir it in until it is combined. Add the honey and stir it in until it is incorporated. Add the flour and stir until the mixture is well combined.
- Pour the goat cheese & honey batter over the brownie batter layer in the pan, then smooth the batter out with a rubber spatula. Bake for 25 to 30 minutes, checking the doneness at 25 minutes
- Allow to cool, then slice.
