1 cup
Baked sweet potato puree
Zest from 1 orange
1 1/2 cups
Sugar
2
Eggs
1 cup
Buttermilk
3 tablespoons
Finely ground cornmeal
1 tablespoon
Vanilla extract
1/4 cup
Melted butter
1/4 teaspoon
Grated nutmeg
1/4 teaspoon
Cinnamon
1/4 teaspoon
Ginger
1
Unbaked pie shell
Whipped cream for serving (if desired)
Additional citrus zest for serving (if desired)
Step by Step Instructions
- Preheat oven to 350 and prepare a pie plate with the pie dough.
- Combine the sweet potato puree, orange zest, sugar, eggs, buttermilk, cornmeal, vanilla extract, melted butter, nutmeg, cinnamon, and ginger in a large bowl and mix until smooth.
- Pour the mix into the pie shell. Bake for 80 to 90 minutes, let cool, and chill until ready to use. If desired, serve with whipped cream and citrus zest.
