Mashed Sweet Potatoes with Bacon

Ingredients
3 pounds
Sweet potatoes
3 slices
Bacon (chopped)
1 tablespoon
Apple cider
1/2 cup
Heavy cream (warmed)
6 tablespoons
Salted butter (cold and cut into pieces)
3 tablespoons
Maple syrup (plus a bit more for drizzling)
1 1/2 teaspoons
Salt
Step by Step Instructions
- Preheat oven to 400. Pierce the potatoes all over with a fork, then place them onto a baking sheet and bake for 45 minutes. Let cool slightly and scoop out the flesh into a bowl and set aside. Discard the skins.
- Cook the bacon in a skillet over medium heat for 8 to 9 minutes, stirring. Set the bacon aside on a paper towel lined plate.
- Add the cider to the pan and cook with the bacon drippings for 30 seconds, then add the potatoes, heavy cream, butter, maple syrup and salt.
- Mash the ingredients in the skillet together with a potato masher until smooth and warm.
- Put the mashed potatoes into a bowl and top with bacon and maple syrup, then serve.
