Ingredients
2 cups
Lion's mane mushrooms (trimmed and roughly chopped)
1 small
Yellow onion (finely diced)
4 cloves
Garlic (minced)
2 tablespoons
Olive oil
1 tablespoon
Nutritional yeast (optional)
2 tablespoons
All purpose flour
2 cups
Vegetable broth
1 teaspoon
Tamari or soy sauce
1/4 teaspoon
Dried thyme
1/4 teaspoon
Dried sage
Salt & pepper to taste
Step by Step Instructions
- Heat the oil in a skillet over medium heat and saute the onion for 5 minutes. Add the mushrooms and cook for 5 more minutes.
- Reduce the heat to medium-low and add the garlic. Saute for an additional minute. Sprinkle the flour over the mixture and cook stirring for 1 or 2 minutes.
- Slowly pour in the vegetable broth, stirring constantly. Let cook for 5 minutes, continuing to stir for the duration.
- Stir the soy sauce, thyme, and sage into the skillet mixture, then taste and season with salt and pepper as desired. stir in the nutritional yeast if desired.
- Let simmer for 5 minutes, stirring occasionally. Remove the skillet from the heat and let cool slightly before serving.
